Hummingbird Cupcakes for Birthdays (Dog and Human)

I've posted this recipe on here before, but as its my absolute favorite cake recipe (and that is saying a lot because I LOVE to bake).  In case you don't believe me I once made it for a pug party, as a treat for the humans, and 3 separate people came up to tell me they were the best cupcakes they ever had.  This weekend I made them for Weasley's first birthday.   Its certainly not a healthy recipe, for dogs or people, but I only let the dogs have half of one each and no one has ever had a problem, Im sure you could lighten it up if you like.



Hummingbird Cupcakes
makes 24 cupcakes 

3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 eggs
3/4 cup vegetable oil
1-1/2 tsp vanilla
1 8oz can crushed pineapple, with liquid
2 mashed bananas
1 cup coarsely chopped pecans

1. Mix flour, sugar, baking soda, cinnamon, salt with a whisk in a good sized bowl.
2. Beat eggs.
3. Add oil and vanilla to beaten eggs and mix until somewhat combined.
4. Add egg/oil/vanilla mixture to flour/sugar/baking soda/cinnamon/salt mixture.
5. Mix together pineapple, bananas, pecans until combined.
6. Add to the rest of ingredients and stir to combine.

Bake at 350 degrees for ~25 minutes until golden and a cake tester comes out clean.

This is a people recipe but nothing in it is bad for dogs.   For the dogs I frost them with vanilla yogurt but for people I use the Cream Cheese Icing recipe from the Magnolia Bakery cookbook.

Cream Cheese Frosting

Ingredients: 
1/2 lb (1 eight oz packages) cream cheese,softened slightly,cut into small pieces
1/4 cup (1/2 stick) unsalted butter,softened slightly,cut into small pieces
1 tsp vanilla extract 

3 cups sifted confectioner's sugar

Beat cream cheese and the butter with mixer until smooth,about 3 minutes.Add the vanilla extract.Gradually add the sugar and beat until well incorporated.

  3. MMMM - delicious! Thank you for the recipe. Weasley is so photogenic. We love that little face.

    You are so right about the expense of having so many family members. We spend $170 biweekly on higher end kibble, plus I cook the 10lb bag of chicken leg quarters with a little tumeric and cinnamon in a crock pot for 24 hrs every 12 days. The only bones I have to remove after the cooking process are the leg and thigh bones. Everything else is mush. Each one gets a huge tablespoon of this over their breakfast and dinner feedings. Not to mention the vet bills, the monthly heartworm meds and flea control as needed. I call them my hobby - hey its cheaper than golf! LOL
    I bake our own doggie biscuits and just made 400 this past weekend.

    A dear friend taught me that if we are on a routine and stick to it, that taking care of them is a piece of cake. He is so right. It is as though each one has an internal clock and know what comes next.
