Happy Columbus Day-Tomato Basil Sauce

The Spinone Italiano (one of my favorite breeds, I would love to own one some day) and a tasty recipe

Pasta with Slow Cooked Tomato Basil Sauce

  • 2 tablespoons olive oil
  • 10 cloves garlic, chopped coarsely (about 1/3 cup)
  • 1 large yellow onion, diced (about 1 1/2 cups)
  • 3 28 oz cans of Muir Glen Tomatoes
  •  2 whole dried bay leaves
  • 1 tablespoon dried rosemary
  • 2 teaspoons dried thyme
  • 1 tablespoon coarse salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup firmly packed basil leaves, cut in slivers with kitchen scissors
  • 1 1lb dried spaghetti
  • Freshly grated Parmesan cheese
Heat the olive oil in a large pot over medium head and cook the onions and garlic for five minutes.  Stir in all the other ingredients except for the basil and cook over low heat, covered, for 2 hrs. Stir occasionally.  Remove the lid from the pot and cook over low heat for 3 hrs and stir occasionally. Take off the heat and remove the bay leaves.   Stir in the basil.


Serve over spaghetti with Parmesan cheese.
