Coconut Cranberry Snowball Cookies
2 1/2 cups coconut flour
1 1/4 cups coconut water
1 cup unsweetened coconut flakes (plus extra for rolling)
1/4 cup dried cranberries
2 tbsp vegetable oil
Preheat oven to 350. In a large bowl stir all ingredients together until well mixed. Scoop out tablespoon amounts and then roll in additional coconut flakes. Place on parchment lined cookie sheets and bake for 20 minutes until golden brown.
Yum - those sound good!
