Mini Walnut Tarts
Pastry
1 stick butter at room temp
4 ounces cream cheese at room temp
1 cup all purpose flour
Filling
2/3 cup of chopped walnuts
1 egg
3/4 cup dark brown sugar
1 tsp vanilla extract
dash of salt
Preheat oven to 325.
Combine the ingredients for the pastry in the food processor, until a firm dough forms. Form into a ball and wrap in plastic wrap and refrigerate for one hour. Shape into 2 dozen 1 inch balls. Using a mini muffin pan, ingreased, press each dough ball into the compartment up the bottom and sides.
Beat the egg, sugar, vanilla, and salt together in an electric mixer until smoth, Stir in the nuts. Spoon the filling into the pastry. Bake 30 min.
